The Incredible Edible Egg

Besides herbs, and vegetables, we also raise chickens. Chickens are easier to raise than children, and they give you fresh eggs every day.

I remember when we were awaiting our first egg. It was kind of liking waiting for our first “child”. Everyday, we would look in the nest, only to find it empty.

One Tuesday afternoon, I walked into the chicken coop. There lay a pure white egg all by itself. At first, I thought my husband was playing a joke on me. I thought he had put one in there to be funny. He assured me that he was not. I was so excited. Our first egg. Being excited over an egg sounds silly now, but it was our first egg after all.

Eggs come in all different colors and sizes. We’ve had some as small as a quarter, and as big as a goose egg. Those, I think, must hurt. Ouch!. No matter what their size, they are all delicious.

The small ones are actually cholesterol free, since they don’t usually have a yolk. Wouldn’t that be great if we could grow only small eggs. It would open up a whole new market for egg lovers who are watching their cholesterol. Yes, I know, that is not going to happen. It is just a freak of nature not seen by most people. Unless you raise your own chickens, you will only see the “perfect” eggs.
