Delicious Apple and Herb Soup
In another life, I was a cook. I love to create with food, and take ingredients that no one would think to put together and come up with a delicious meal. I also don’t like things to go to waste.
In the barn lay 4 milk crates full of apples that we picked in September. I knew if I didn’t use them soon, they would soon rot.
Crazy as it may sound, apples make a delicious soup. Packed with loads of nutrition, apple soup is a wonderful side dish, or a main meal.
- 6 cups apples-Use a variety for a great taste!
- 1 medium onion, diced
- 1 small butternut squash
- 2 small red potatoes
- 1 cup of chicken stock
- 1 cup water
- salt-dash
- pepper-dash
- garlic powder-dash
- onion powder-dash
- lemon thyme-dash
- cayenne-sprinkle
Cook apples, potato, onion and squash in the chicken broth and water in one pot. Cook for about 30 minutes or until tender.
Pour into a blender or Vitamix to obtain the creamy consistency. Add seasonings to taste.
